To make this dish at home by prescription from the author Gomer would need: 270g dried soba noodles, 1 bunch asparagus, cut into 3cm pieces, 1/2 bunch watercress, cut into small sprigs, 175g smoked salmon portion, flaked, 1 Lebanese cucumber, halved lengthways, sliced , 4 green onions, thinly sliced, 2 tbsp chilli soy noodle sauce .

Ingredients:

  • 270g dried soba noodles 
  • 1 bunch asparagus, cut into 3cm pieces 
  • 1/2 bunch watercress, cut into small sprigs 
  • 175g smoked salmon portion, flaked 
  • 1 Lebanese cucumber, halved lengthways, sliced 
  • 4 green onions, thinly sliced 
  • 2 tbsp chilli soy noodle sauce 

Instructions

  1. Cook noodles in a large saucepan of boiling, salted water for 2 minutes. Add asparagus. Return to the boil. Cook for 2 to 3 minutes or until noodles and asparagus are tender. Drain. Refresh under cold water. Drain.
  2. Transfer noodle mixture to a large bowl. Add watercress, salmon, cucumber, onion and sauce. Season with salt and pepper. Toss to combine. Serve.
