To make this dish at home by prescription from the author Gomer would need: 350g personal melon , peeled, chopped, 1 smoked trout , bones and skin removed, flaked, 2 x 100g pkts baby Asian salad leaves, Handful mint leaves, torn, Handful basil leaves, torn , 2 tbsp sesame seeds, toasted, 1/3 cup peanut oil, 2 tbsp fresh lime juice , 1 tbsp soy sauce, 2 tsp sesame oil, 2 tsp caster sugar.

Ingredients:

  • 350g personal melon , peeled, chopped 
  • 1 smoked trout , bones and skin removed, flaked 
  • 2 x 100g pkts baby Asian salad leaves 
  • Handful mint leaves, torn 
  • Handful basil leaves, torn 
  • 2 tbsp sesame seeds, toasted 
  • 1/3 cup peanut oil 
  • 2 tbsp fresh lime juice 
  • 1 tbsp soy sauce 
  • 2 tsp sesame oil 
  • 2 tsp caster sugar 

Instructions

  1. Combine the watermelon, flaked trout, salad leaves, mint and basil in a bowl.
  2. To make the dressing, whisk together all the dressing ingredients. 3 Pour the dressing over the salad and toss until combined. Scatter with the sesame seeds to serve.
