To make this dish at home by prescription from the author Gomer would need: 4 bagels, 1 ripe avocado, 1 cup wild rocket leaves, 1 tomato, thinly sliced, 1/2 Lebanese cucumber, thinly sliced , 16-24 slices smoked salmon, 1/2 small red onion, thinly sliced, 1 tbsp red wine vinegar , 1 tbsp olive oil.
Ingredients:
- 4 bagels
- 1 ripe avocado
- 1 cup wild rocket leaves
- 1 tomato, thinly sliced
- 1/2 Lebanese cucumber, thinly sliced
- 16-24 slices smoked salmon
- 1/2 small red onion, thinly sliced
- 1 tbsp red wine vinegar
- 1 tbsp olive oil
Instructions
- Preheat the grill to high. Split the bagels and toast under the grill for a few minutes until lightly golden. Place 2 halves on each serving plate.
- Halve the avocado and remove the stone. Scoop out the flesh and spread on bagels.
- Add some rocket, then tomato and cucumber slices. Top each bagel half with 2-3 smoked salmon slices, then red onion.
- Place the red wine vinegar and olive oil in a small bowl and whisk to combine.
- Drizzle the dressing over the bagels, then season with salt and freshly ground black pepper. Serve immediately.
