To make this dish at home by prescription from the author Gomer would need: 4 bagels, 1 ripe avocado, 1 cup wild rocket leaves, 1 tomato, thinly sliced, 1/2 Lebanese cucumber, thinly sliced , 16-24 slices smoked salmon, 1/2 small red onion, thinly sliced, 1 tbsp red wine vinegar , 1 tbsp olive oil.

Ingredients:

  • 4 bagels 
  • 1 ripe avocado 
  • 1 cup wild rocket leaves 
  • 1 tomato, thinly sliced 
  • 1/2 Lebanese cucumber, thinly sliced 
  • 16-24 slices smoked salmon 
  • 1/2 small red onion, thinly sliced 
  • 1 tbsp red wine vinegar 
  • 1 tbsp olive oil 

Instructions

  1. Preheat the grill to high. Split the bagels and toast under the grill for a few minutes until lightly golden. Place 2 halves on each serving plate.
  2. Halve the avocado and remove the stone. Scoop out the flesh and spread on bagels.
  3. Add some rocket, then tomato and cucumber slices. Top each bagel half with 2-3 smoked salmon slices, then red onion.
  4. Place the red wine vinegar and olive oil in a small bowl and whisk to combine.
  5. Drizzle the dressing over the bagels, then season with salt and freshly ground black pepper. Serve immediately.
