Brussels sprouts with orange and hazelnuts

To make this dish at home by prescription from the author Gomer would need: 1/3 cup hazelnuts, 500g Brussels sprouts, ends trimmed, halved, 2 tsp olive oil, 100g shortcut bacon, finely chopped, 1 orange, zested, juiced , 1 tbsp wholegrain mustard, 1/4 cup coarsely chopped chives, Grilled salmon fillets, to serve .
Ingredients:
- 1/3 cup hazelnuts
- 500g Brussels sprouts, ends trimmed, halved
- 2 tsp olive oil
- 100g shortcut bacon, finely chopped
- 1 orange, zested, juiced
- 1 tbsp wholegrain mustard
- 1/4 cup coarsely chopped chives
- Grilled salmon fillets, to serve
Instructions
- Preheat oven to 180C. Spread the hazelnuts over a baking tray. Bake for 5-7 mins or until toasted. Set aside to cool. Rub hazelnuts in a tea towel to remove the skins. Coarsely chop.
- Meanwhile, cook the Brussels sprouts in a large saucepan of boiling water for 2 mins or until almost tender. Drain well.
- Heat the oil in a large frying pan over high heat. Cook the bacon, stirring, for 5 mins or until golden brown. Add the Brussels sprouts and cook, tossing, for 2 mins or until golden. Add the orange zest, orange juice and mustard. Cook, tossing, for 2 mins or until heated through. Season with salt and pepper. Sprinkle with hazelnuts and chives. Serve with grilled salmon.
