To make this dish at home by prescription from the author Gomer would need: 375g dried spiral pasta, 2 bunches asparagus spears, trimmed, cut into 5cm lengths, 2 tsp finely grated lemon rind, 1/4 cup lemon juice, 1 tbsp olive oil , 200g sliced smoked salmon, chopped, 3/4 cup ricotta cheese, crumbled, 2 tbsp fresh dill sprigs, chopped , 1/4 cup chopped walnuts.
Ingredients:
- 375g dried spiral pasta
- 2 bunches asparagus spears, trimmed, cut into 5cm lengths
- 2 tsp finely grated lemon rind
- 1/4 cup lemon juice
- 1 tbsp olive oil
- 200g sliced smoked salmon, chopped
- 3/4 cup ricotta cheese, crumbled
- 2 tbsp fresh dill sprigs, chopped
- 1/4 cup chopped walnuts
Instructions
- Cook pasta in a large saucepan of boiling, salted water until tender, adding asparagus for the last 2 minutes of cooking. Drain. Return to pan over low heat.
- Add lemon rind, lemon juice, oil, salmon, ricotta, dill and walnuts. Season with salt and pepper. Toss to coat. Serve.
