To make this dish at home by prescription from the author Gomer would need: 375g dried spiral pasta, 2 bunches asparagus spears, trimmed, cut into 5cm lengths, 2 tsp finely grated lemon rind, 1/4 cup lemon juice, 1 tbsp olive oil , 200g sliced smoked salmon, chopped, 3/4 cup ricotta cheese, crumbled, 2 tbsp fresh dill sprigs, chopped , 1/4 cup chopped walnuts.

Ingredients:

  • 375g dried spiral pasta 
  • 2 bunches asparagus spears, trimmed, cut into 5cm lengths 
  • 2 tsp finely grated lemon rind 
  • 1/4 cup lemon juice 
  • 1 tbsp olive oil 
  • 200g sliced smoked salmon, chopped 
  • 3/4 cup ricotta cheese, crumbled 
  • 2 tbsp fresh dill sprigs, chopped 
  • 1/4 cup chopped walnuts 

Instructions

  1. Cook pasta in a large saucepan of boiling, salted water until tender, adding asparagus for the last 2 minutes of cooking. Drain. Return to pan over low heat.
  2. Add lemon rind, lemon juice, oil, salmon, ricotta, dill and walnuts. Season with salt and pepper. Toss to coat. Serve.
