To make this dish at home by prescription from the author Gomer would need: 1 brown onion, peeled, root intact, 2 desiree potatoes, washed, 300g kumara , peeled, 250g swede, peeled, 750g pumpkin, peeled, deseeded , steamed white fish and lemon, to serve, 2 tsp ground cumin, 2 tsp ground coriander , 1/2 tsp ground ginger, 1/2 tsp ground chilli, 2 tbsp olive oil.

Ingredients:

  • 1 brown onion, peeled, root intact 
  • 2 desiree potatoes, washed 
  • 300g kumara , peeled 
  • 250g swede, peeled 
  • 750g pumpkin, peeled, deseeded 
  • steamed white fish and lemon, to serve 
  • 2 tsp ground cumin 
  • 2 tsp ground coriander 
  • 1/2 tsp ground ginger 
  • 1/2 tsp ground chilli 
  • 2 tbsp olive oil 

Instructions

  1. Cut onion into 8 wedges. Cut all remaining vegetables into 3cm pieces. Place all vegetables into a baking dish.
  2. Make marinade: Combine all spices in a bowl. Add oil. Stir until well combined.
  3. Add marinade and salt to vegetables. Toss to coat. Roast for 1 1/2 hours, turning occasionally, or until golden and tender.
  4. Serve with fish and lemon wedges.
