To make this dish at home by prescription from the author Gomer would need: 1 brown onion, peeled, root intact, 2 desiree potatoes, washed, 300g kumara , peeled, 250g swede, peeled, 750g pumpkin, peeled, deseeded , steamed white fish and lemon, to serve, 2 tsp ground cumin, 2 tsp ground coriander , 1/2 tsp ground ginger, 1/2 tsp ground chilli, 2 tbsp olive oil.
Ingredients:
- 1 brown onion, peeled, root intact
- 2 desiree potatoes, washed
- 300g kumara , peeled
- 250g swede, peeled
- 750g pumpkin, peeled, deseeded
- steamed white fish and lemon, to serve
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp ground ginger
- 1/2 tsp ground chilli
- 2 tbsp olive oil
Instructions
- Cut onion into 8 wedges. Cut all remaining vegetables into 3cm pieces. Place all vegetables into a baking dish.
- Make marinade: Combine all spices in a bowl. Add oil. Stir until well combined.
- Add marinade and salt to vegetables. Toss to coat. Roast for 1 1/2 hours, turning occasionally, or until golden and tender.
- Serve with fish and lemon wedges.
