Ingredients:

  • 1kg kingfish fillets, cut into 2cm-thick slices 
  • 300g white miso paste 
  • 80ml water 
  • 2 nori sheets 
  • 3 x 300g pkts firm tofu, drained on paper towel 

Instructions

  1. Place the fish in a large, shallow glass or ceramic dish. Combine the miso paste and water in a small bowl. Spoon the miso mixture over the fish. Cover with plastic wrap and place in the fridge for 1 hour to develop the flavours.
  2. Cut the nori sheets into ten 2cm-wide strips.
  3. Preheat grill on high. Line a baking tray with foil. Remove the fish from the marinade and place on the prepared tray. Discard marinade. Cook under preheated grill, turning occasionally, for 4-6 minutes or until just cooked through.
  4. Cut tofu crossways into ten 1.5cm-thick slices. Place each piece of fish on a piece of tofu and secure with a piece of nori.
