Ingredients:
- 1/2 cup whole-egg mayonnaise
- 1 shallot, finely chopped
- 1 tbsp Coles Brand Baby Capers
- 1 tbsp chopped dill
- 2 tsp lemon juice
- 1/2 loaf Coles Bakery Stone Baked White Sourdough Vienna, cut into eight 1cm-thick slices, chargrilled
- 1 Hass avocado, sliced
- 20g mixed salad leaves
- 200g Coles Brand Smoked Salmon
- 1/2 Lebanese cucumber, peeled into ribbons
Instructions
- Combine the mayonnaise, shallot, capers, dill and lemon juice in a small bowl. Season.
- Spread toast with mayonnaise mixture. Fill with avocado, salad leaves, salmon and cucumber.
