Ingredients:

  • 1/2 cup whole-egg mayonnaise 
  • 1 shallot, finely chopped 
  • 1 tbsp Coles Brand Baby Capers 
  • 1 tbsp chopped dill 
  • 2 tsp lemon juice 
  • 1/2 loaf Coles Bakery Stone Baked White Sourdough Vienna, cut into eight 1cm-thick slices, chargrilled 
  • 1 Hass avocado, sliced 
  • 20g mixed salad leaves 
  • 200g Coles Brand Smoked Salmon 
  • 1/2 Lebanese cucumber, peeled into ribbons 

Instructions

  1. Combine the mayonnaise, shallot, capers, dill and lemon juice in a small bowl. Season.
  2. Spread toast with mayonnaise mixture. Fill with avocado, salad leaves, salmon and cucumber.
