To make this dish at home by prescription from the author Gomer would need: 4 eggs, at room temperature, 425g can tuna in olive oil, drained, flaked into large chunks, 1/3 cup creamy roasted garlic dressing, 8 thick slices kalamata olive sourdough bread, 1 Lebanese cucumber, sliced diagonally , 2 medium tomatoes, sliced .
Ingredients:
- 4 eggs, at room temperature
- 425g can tuna in olive oil, drained, flaked into large chunks
- 1/3 cup creamy roasted garlic dressing
- 8 thick slices kalamata olive sourdough bread
- 1 Lebanese cucumber, sliced diagonally
- 2 medium tomatoes, sliced
Instructions
- Place eggs in a medium saucepan. Cover with cold water. Bring to the boil over high heat, stirring occasionally (this helps the yolks stay centred). Reduce heat to medium. Simmer for 5 minutes for a medium boiled egg. Drain. Refresh under cold water. Peel. Thickly slice.
- Gently toss tuna and dressing together in a bowl. Place 4 slices of bread on a flat surface. Top with cucumber, tomato, tuna mixture and egg. Sandwich with remaining bread slices. Cut in half. Serve.
