To make this dish at home by prescription from the author Gomer would need: 24 fresh anchovies*, 250ml white wine vinegar, 2 tsp chopped fresh oregano, 1 bay leaf, 2 tsp sea salt , 125ml Spanish extra virgin olive oil, 3 garlic cloves, chopped, 2 tbsp chopped flat-leaf parsley .

Ingredients:

  • 24 fresh anchovies* 
  • 250ml white wine vinegar 
  • 2 tsp chopped fresh oregano 
  • 1 bay leaf 
  • 2 tsp sea salt 
  • 125ml Spanish extra virgin olive oil 
  • 3 garlic cloves, chopped 
  • 2 tbsp chopped flat-leaf parsley 

Instructions

  1. Clean the anchovies, removing the heads and spines. Place in a bowl and add the white wine vinegar, oregano, bay leaf and salt. Cover and refrigerate for 24 hours.
  2. Drain the anchovies well and place in a serving dish.
  3. Combine the olive oil, garlic and parsley in a bowl, then pour over the anchovies and serve.
