To make this dish at home by prescription from the author Gomer would need: 24 fresh anchovies*, 250ml white wine vinegar, 2 tsp chopped fresh oregano, 1 bay leaf, 2 tsp sea salt , 125ml Spanish extra virgin olive oil, 3 garlic cloves, chopped, 2 tbsp chopped flat-leaf parsley .
Ingredients:
- 24 fresh anchovies*
- 250ml white wine vinegar
- 2 tsp chopped fresh oregano
- 1 bay leaf
- 2 tsp sea salt
- 125ml Spanish extra virgin olive oil
- 3 garlic cloves, chopped
- 2 tbsp chopped flat-leaf parsley
Instructions
- Clean the anchovies, removing the heads and spines. Place in a bowl and add the white wine vinegar, oregano, bay leaf and salt. Cover and refrigerate for 24 hours.
- Drain the anchovies well and place in a serving dish.
- Combine the olive oil, garlic and parsley in a bowl, then pour over the anchovies and serve.
