Tomato, chilli and mackerel pizza

We love a sneaky shortcut! Simply use easy bought pizza bases to cook up these cheesy, chilli topped pizzas.

To make this dish at home by prescription from the author Gomer would need: 60ml extra virgin olive oil, 3 large red onions, halved, thinly sliced, 1⁄4 cup fresh oregano leaves, chopped, 2 garlic cloves, crushed, 2 fresh pizza bases , 100g coarsely grated mozzarella, 250g mixed grape tomatoes, halved, 2 x 115g cans King Oscar Mackerel Fillets in Olive Oil, drained, flaked , 100g pitted kalamata olives, 1-2 long fresh red chillies, thinly sliced, Baby rocket leaves, to serve, Lemon wedges, to serve.

Ingredients:

  • 60ml extra virgin olive oil 
  • 3 large red onions, halved, thinly sliced 
  • 1⁄4 cup fresh oregano leaves, chopped 
  • 2 garlic cloves, crushed 
  • 2 fresh pizza bases 
  • 100g coarsely grated mozzarella 
  • 250g mixed grape tomatoes, halved 
  • 2 x 115g cans King Oscar Mackerel Fillets in Olive Oil, drained, flaked 
  • 100g pitted kalamata olives 
  • 1-2 long fresh red chillies, thinly sliced 
  • Baby rocket leaves, to serve 
  • Lemon wedges, to serve 

Instructions

  1. Preheat the oven to 230C/210C fan forced. Heat 1 tablespoon of the oil in a large non-stick frying pan over medium heat. Add the onion. Season and cook, stirring occasionally, for 15 minutes or until caramelised.
  2. Meanwhile, place the oregano, garlic and remaining oil in a small bowl. Mix to combine. Place the pizza bases on 2 large baking trays. Spread the pizza bases with the oregano mixture to cover.
  3. Top the pizza bases with the onion mixture, mozzarella, tomato, mackerel, olives and chilli. Cook for 20 minutes or until golden and crisp. Sprinkle with rocket leaves and serve with lemon wedges.
