To make this dish at home by prescription from the author Gomer would need: 200g smoked salmon, thinly sliced, 2 x 250g punnets qukes, quartered lengthways, 2 avocados, halved, stone removed, peeled, thinly sliced, 2 tbsp horseradish cream, 2 tbsp fresh lemon juice , 2 tbsp olive oil, 1 bunch watercress, sprigs picked, washed .

Ingredients:

  • 200g smoked salmon, thinly sliced 
  • 2 x 250g punnets qukes, quartered lengthways 
  • 2 avocados, halved, stone removed, peeled, thinly sliced 
  • 2 tbsp horseradish cream 
  • 2 tbsp fresh lemon juice 
  • 2 tbsp olive oil 
  • 1 bunch watercress, sprigs picked, washed 

Instructions

  1. Divide the smoked salmon, quke and avocado among serving plates.
  2. Whisk together the horseradish cream, lemon juice and oil in a jug. Season with salt and pepper. Drizzle over a little dressing. Top with watercress and serve with the remaining dressing.
