To make this dish at home by prescription from the author Gomer would need: 3 cups pitted kalamata olives, drained, rinsed, 1/3 cup chopped fresh flat-leaf parsley leaves, 1 garlic clove, chopped, 1 anchovy fillet, 1 tbsp drained capers , 2 tbsp olive oil, Crostini, to serve .

Ingredients:

  • 3 cups pitted kalamata olives, drained, rinsed 
  • 1/3 cup chopped fresh flat-leaf parsley leaves 
  • 1 garlic clove, chopped 
  • 1 anchovy fillet 
  • 1 tbsp drained capers 
  • 2 tbsp olive oil 
  • Crostini, to serve 

Instructions

  1. Process olives, parsley, garlic, anchovy and capers until finely chopped.
  2. With the motor running, add oil in a thin, steady stream, scraping bowl with a spatula occasionally, until tapenade is smooth.
