To make this dish at home by prescription from the author Gomer would need: 300g green beans, trimmed, thinly sliced lengthways, 2 large Lebanese cucumbers, halved, thinly sliced diagonally, 1.5kg cooked medium king prawns, peeled , deveined, 1/3 cup olive oil, 2 tbsp lemon juice , 2 tbsp chopped fresh dill sprigs, 2 tsp wholegrain mustard .

Ingredients:

  • 300g green beans, trimmed, thinly sliced lengthways 
  • 2 large Lebanese cucumbers, halved, thinly sliced diagonally 
  • 1.5kg cooked medium king prawns, peeled , deveined 
  • 1/3 cup olive oil 
  • 2 tbsp lemon juice 
  • 2 tbsp chopped fresh dill sprigs 
  • 2 tsp wholegrain mustard 

Instructions

  1. Cook beans in a large saucepan of boiling water for 30 seconds or until just tender. Refresh in cold water. Drain.
  2. Make dressing: Combine ingredients in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
  3. Combine beans, cucumber and prawns in a large bowl. Pour over dressing. Toss to combine. Serve.
