Prawn, cucumber and bean starter

To make this dish at home by prescription from the author Gomer would need: 300g green beans, trimmed, thinly sliced lengthways, 2 large Lebanese cucumbers, halved, thinly sliced diagonally, 1.5kg cooked medium king prawns, peeled , deveined, 1/3 cup olive oil, 2 tbsp lemon juice , 2 tbsp chopped fresh dill sprigs, 2 tsp wholegrain mustard .
Ingredients:
- 300g green beans, trimmed, thinly sliced lengthways
- 2 large Lebanese cucumbers, halved, thinly sliced diagonally
- 1.5kg cooked medium king prawns, peeled , deveined
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 2 tbsp chopped fresh dill sprigs
- 2 tsp wholegrain mustard
Instructions
- Cook beans in a large saucepan of boiling water for 30 seconds or until just tender. Refresh in cold water. Drain.
- Make dressing: Combine ingredients in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
- Combine beans, cucumber and prawns in a large bowl. Pour over dressing. Toss to combine. Serve.
