To make this dish at home by prescription from the author sheff would need: 900g diced pork, 100g snow peas, halved diagonally, 1/4 Chinese cabbage, finely shredded, 1 small red capsicum, deseeded, thinly sliced, 1 small green capsicum, deseeded, thinly sliced , 2 tbsp roasted unsalted peanuts, roughly chopped, 1/2 cup fresh coriander leaves, 2 tbsp sweet and sour sauce , 1 tbsp salt reduced soy sauce, 1 tsp chili sauce.

Ingredients:

  • 900g diced pork 
  • 100g snow peas, halved diagonally 
  • 1/4 Chinese cabbage, finely shredded 
  • 1 small red capsicum, deseeded, thinly sliced 
  • 1 small green capsicum, deseeded, thinly sliced 
  • 2 tbsp roasted unsalted peanuts, roughly chopped 
  • 1/2 cup fresh coriander leaves 
  • 2 tbsp sweet and sour sauce 
  • 1 tbsp salt reduced soy sauce 
  • 1 tsp chili sauce 

Instructions

  1. Soak twelve 20cm wooden skewers in cold water for at least 30 minutes.
  2. To make the dressing, combine the sweet and sour sauce, soy sauce and chilli sauce. Set aside.
  3. Thread the pork onto the skewers. Heat a chargrill pan over a medium heat. Cook the skewers, for 2 minutes on all sides or until golden and just cooked through.
  4. Meanwhile, cook the snow peas in a saucepan of boiling water for 1-2 minutes or until just tender. Drain and plunge into ice cold water. Drain and transfer to a large bowl. Add the cabbage, capsicums, peanuts and coriander and toss until well combined.
  5. Divide the salad among serving plates and top with the skewers. Drizzle with the dressing to serve.
