To make this dish at home by prescription from the author sheff would need: 900g diced pork, 100g snow peas, halved diagonally, 1/4 Chinese cabbage, finely shredded, 1 small red capsicum, deseeded, thinly sliced, 1 small green capsicum, deseeded, thinly sliced , 2 tbsp roasted unsalted peanuts, roughly chopped, 1/2 cup fresh coriander leaves, 2 tbsp sweet and sour sauce , 1 tbsp salt reduced soy sauce, 1 tsp chili sauce.
Ingredients:
- 900g diced pork
- 100g snow peas, halved diagonally
- 1/4 Chinese cabbage, finely shredded
- 1 small red capsicum, deseeded, thinly sliced
- 1 small green capsicum, deseeded, thinly sliced
- 2 tbsp roasted unsalted peanuts, roughly chopped
- 1/2 cup fresh coriander leaves
- 2 tbsp sweet and sour sauce
- 1 tbsp salt reduced soy sauce
- 1 tsp chili sauce
Instructions
- Soak twelve 20cm wooden skewers in cold water for at least 30 minutes.
- To make the dressing, combine the sweet and sour sauce, soy sauce and chilli sauce. Set aside.
- Thread the pork onto the skewers. Heat a chargrill pan over a medium heat. Cook the skewers, for 2 minutes on all sides or until golden and just cooked through.
- Meanwhile, cook the snow peas in a saucepan of boiling water for 1-2 minutes or until just tender. Drain and plunge into ice cold water. Drain and transfer to a large bowl. Add the cabbage, capsicums, peanuts and coriander and toss until well combined.
- Divide the salad among serving plates and top with the skewers. Drizzle with the dressing to serve.
