Herb and pepper pork with potato, apple and bean salad

To make this dish at home by prescription from the author sheff would need: 400g baby red delight potatoes, 150g green beans, trimmed, 450g pork fillet, thinly sliced, 2 tsp freshly ground black pepper, 2 1/2 tbsp extra virgin olive oil , 12g packet fresh herb blend for pork, finely chopped, 1 tbsp horseradish cream, 2 tbsp white wine vinegar , 1 large green apple, quartered, cored, thinly sliced lengthways, 1 avocado, halved, thinly sliced crossways.

Ingredients:

  • 400g baby red delight potatoes 
  • 150g green beans, trimmed 
  • 450g pork fillet, thinly sliced 
  • 2 tsp freshly ground black pepper 
  • 2 1/2 tbsp extra virgin olive oil 
  • 12g packet fresh herb blend for pork, finely chopped 
  • 1 tbsp horseradish cream 
  • 2 tbsp white wine vinegar 
  • 1 large green apple, quartered, cored, thinly sliced lengthways 
  • 1 avocado, halved, thinly sliced crossways 

Instructions

  1. Place potato in a metal steamer. Place steamer in a large saucepan of simmering water. Cook, covered, for 10 minutes. Add beans. Steam for a further 3 minutes or until just tender. Cool. Slice potato into rounds.
  2. Meanwhile, combine pork, pepper and 2 teaspoons oil in a bowl. Heat a large frying pan over high heat. Cook pork, in batches, for 3 to 5 minutes or until just tender. Transfer to a heatproof bowl. Add herbs, horseradish, vinegar and remaining oil to hot pork in bowl. Toss gently to combine. Season with salt. Cover. Set aside for 15 minutes.
  3. Combine potato, beans, apple and avocado in a bowl. Season with salt and pepper. Serve potato salad with pork and drizzled with dressing.
