Sticky pork ribs with tomato barbecue sauce

To make this dish at home by prescription from the author sheff would need: 2kg US-style pork spare ribs, Barbecued corn cobs in their husks and chat potatoes, to serve, 1 granny smith apple, peeled, cored, quartered, 2 onions, cut into wedges, 4 cloves garlic , 4 red bird’s-eye chillies, seeded, 400g can Italian tomatoes, 100g tomato paste , 375ml cider vinegar, 285g molasses, 60ml vegetable oil, 70g Dijon mustard, 150g sweet and sour gherkins, 2 tbsp Worcestershire sauce, 1 tsp ground turmeric, 1 tsp Spanish smoked paprika.
Ingredients:
- 2kg US-style pork spare ribs
- Barbecued corn cobs in their husks and chat potatoes, to serve
- 1 granny smith apple, peeled, cored, quartered
- 2 onions, cut into wedges
- 4 cloves garlic
- 4 red bird’s-eye chillies, seeded
- 400g can Italian tomatoes
- 100g tomato paste
- 375ml cider vinegar
- 285g molasses
- 60ml vegetable oil
- 70g Dijon mustard
- 150g sweet and sour gherkins
- 2 tbsp Worcestershire sauce
- 1 tsp ground turmeric
- 1 tsp Spanish smoked paprika
- 1 tsp ground cumin
Instructions
- Preheat oven to 160C. Place ribs in a large, deep roasting pan. Pour over enough boiling water to cover ribs, then cover pan with foil and roast for 1 hour. Remove ribs. Pat dry with paper towel.
- Meanwhile, to make sauce, blend all ingredients in a blender until smooth. Transfer the mixture to a heavy-based saucepan and simmer over medium heat, stirring occasionally, for 45 minutes or until thick and reduced by half. Refrigerate until needed or for up to 1 month in a sterilised jar. Makes 1L.
- Preheat a barbecue to medium. Brush ribs with 1 cup (250ml) barbecue sauce and place, curved-side up, on barbecue. Close the barbecue and cook ribs for 10 minutes. Turn ribs over, brush with 1/2 cup (125ml) sauce and cook, covered, for a further 5 minutes or until browned.
- Serve with remaining barbecue sauce, barbecued corn cobs and chat potatoes.
