Pork ball & pak choy noodle soup

Aromatic with kaffir lime, ginger and coconut, this hearty noodle soup is a feast for the senses.

To make this dish at home by prescription from the author sheff would need: 250g lean pork mince, 2 garlic cloves, crushed, 2 tsp finely grated fresh ginger, 2 tsp soy sauce, 1 lime, rind finely grated, cut in half , 3 shallots, trimmed, thinly sliced diagonally, 200g pkt fresh or shelf-fresh flat rice noodles, 1L chicken stock , 400ml can coconut milk, 6 kaffir lime leaves, 100g green round beans, sliced diagonally, 1 bunch baby pak choy, trimmed, stems separated, 1/3 cup fresh coriander leaves.
Ingredients:
- 250g lean pork mince
- 2 garlic cloves, crushed
- 2 tsp finely grated fresh ginger
- 2 tsp soy sauce
- 1 lime, rind finely grated, cut in half
- 3 shallots, trimmed, thinly sliced diagonally
- 200g pkt fresh or shelf-fresh flat rice noodles
- 1L chicken stock
- 400ml can coconut milk
- 6 kaffir lime leaves
- 100g green round beans, sliced diagonally
- 1 bunch baby pak choy, trimmed, stems separated
- 1/3 cup fresh coriander leaves
Instructions
- Combine the pork mince, garlic, ginger, soy sauce and lime rind in a bowl. Add one-third of the shallot and stir until well combined. Roll the pork mixture into 2-3cm balls.
- Place noodles in a heatproof bowl. Cover with boiling water. Set aside for 5 minutes or until tender. Drain.
- Meanwhile, bring the stock to a simmer in a saucepan over medium heat. Stir in coconut milk. Bring to a simmer. Add pork balls and kaffir lime leaves. Simmer for 3 minutes or until pork balls are cooked through. Add beans and pak choy. Cook for 1 minute or until vegetables are bright green and tender crisp. Stir in half the remaining shallot.
- Divide noodles and stock mixture among serving bowls. Top with coriander and remaining shallot. Serve with lime.
