Spiced honey roast pork with apple & mustard salad

This sweet apple salad is a perfect compliment to the honey mustard pork.

To make this dish at home by prescription from the author sheff would need: 1 tbsp honey, 1/2 tsp mustard powder, 1/2 tsp ground ginger, 1 tsp ground coriander, 300g piece pork fillet , 1 small Granny Smith apple, 1 tbsp lemon juice, 2 witlof, thinly sliced , 1/4 cup roughly chopped flat-leaf parsley leaves, 1 tsp wholegrain mustard, 2 tbsp whole-egg mayonnaise.
Ingredients:
- 1 tbsp honey
- 1/2 tsp mustard powder
- 1/2 tsp ground ginger
- 1 tsp ground coriander
- 300g piece pork fillet
- 1 small Granny Smith apple
- 1 tbsp lemon juice
- 2 witlof, thinly sliced
- 1/4 cup roughly chopped flat-leaf parsley leaves
- 1 tsp wholegrain mustard
- 2 tbsp whole-egg mayonnaise
Instructions
- Preheat the oven to 220C. Line a baking tray with baking paper.
- For the apple and mustard salad, core the apple and thinly slice. Cut the slices into matchsticks and combine in a bowl with the lemon juice. Top with the witlof and chopped parsley, then cover and refrigerate until required.
- Combine the honey, mustard powder, ginger and coriander in a small bowl with 2 teaspoons sea salt. Place the pork fillet on prepared tray, spread mixture over top of the pork and roast for 16-18 minutes or until browned all over. Remove from the oven, cover loosely with foil and rest for 10 minutes.
- Meanwhile, add the wholegrain mustard and mayonnaise to the salad and toss until well combined, season to taste with sea salt and freshly ground black pepper.
- Divide the salad between serving plates and top with slices of pork.
