To make this dish at home by prescription from the author sheff would need: 45g packet Table of Plenty lemon & herb dukkah, 600g Coles pork fillet, Spray olive oil, 4 medium beetroot, ends trimmed, peeled, grated, 400g can Coles Brand cannellini beans, rinsed, drained , 60g baby rocket, 1 tbsp extra virgin olive oil, 1 tbsp orange juice , 60g Persian feta.
Ingredients:
- 45g packet Table of Plenty lemon & herb dukkah
- 600g Coles pork fillet
- Spray olive oil
- 4 medium beetroot, ends trimmed, peeled, grated
- 400g can Coles Brand cannellini beans, rinsed, drained
- 60g baby rocket
- 1 tbsp extra virgin olive oil
- 1 tbsp orange juice
- 60g Persian feta
Instructions
- Preheat oven to 180C or 160C fan-forced. Place dukkah on a plate. Add the pork and roll to coat. Refrigerate for 5 minutes.
- Heat a non-stick ovenproof frying pan over medium heat. Spray with oil. Cook the pork, turning, for 5-6 minutes or until dukkah is golden. Place pan in oven and bake for 3-5 minutes or until just cooked through. Rest for 5 minutes.
- Layer the beetroot, beans and rocket on a platter. Whisk the oil and orange juice in a jug. Season. Drizzle dressing over the salad. Crumble over the feta.
- Slice pork and serve with salad.
