Pork tacos with grilled peach salsa

This 30-minute pork taco recipe is perfectly complemented by sweet grilled peach salsa.

To make this dish at home by prescription from the author sheff would need: 3 tsp ground cumin, 1 tsp hot chilli powder, 1 tbsp olive oil, 2 garlic cloves, crushed, 500g pork medallions, thinly sliced , 2 peaches, cut into wedges, 8 mini tortillas, 1 cup fresh coriander leaves , 1/2 small red onion, finely chopped, 1 long red chilli, seeded, cut into long thin strips, Plain yoghurt, to serve, Lime wedges, to serve.

Ingredients:

  • 3 tsp ground cumin 
  • 1 tsp hot chilli powder 
  • 1 tbsp olive oil 
  • 2 garlic cloves, crushed 
  • 500g pork medallions, thinly sliced 
  • 2 peaches, cut into wedges 
  • 8 mini tortillas 
  • 1 cup fresh coriander leaves 
  • 1/2 small red onion, finely chopped 
  • 1 long red chilli, seeded, cut into long thin strips 
  • Plain yoghurt, to serve 
  • Lime wedges, to serve 

Instructions

  1. Combine cumin, chilli powder, oil and garlic in a bowl. Add pork. Season with salt and pepper. Toss well to coat. Set aside for 10 minutes.
  2. Meanwhile, heat a chargrill pan or barbecue grill on medium-high heat. Cook peaches for 2 minutes each side or until charred. Cool for 2 minutes. Cut into 1cm pieces.
  3. Add pork to chargrill. Cook for 2 minutes each side or until browned and just cooked through. Transfer to a bowl. 4 Meanwhile, cook tortillas, in batches, in a medium frying pan over high heat for 20 seconds each side until heated through and starting to blister and blacken. 5 Combine peach, coriander, onion and chilli in a bowl. Fill tortillas with pork and salsa. Serve with yoghurt and lime wedges.
