Pork meatballs with sweet chilli noodles

The kids will love these pork meatballs with slurpy noodles (plus theres loads of veg in the bowl - bonus!)

To make this dish at home by prescription from the author sheff would need: 400g pork mince, 1 tsp sesame oil, 2 tsp salt-reduced soy sauce, 1 tbsp plum sauce, 1/2 small zucchini, grated , 1/2 small carrot, grated, 450g fresh hokkien noodles, 1 tbsp salt-reduced soy sauce, extra , 1/4 cup sweet chilli sauce, 2 tsp canola oil, 150g broccoli florets, 115g punnet baby corn, halved, 12 snow peas, trimmed and halved.

Ingredients:

  • 400g pork mince 
  • 1 tsp sesame oil 
  • 2 tsp salt-reduced soy sauce 
  • 1 tbsp plum sauce 
  • 1/2 small zucchini, grated 
  • 1/2 small carrot, grated 
  • 450g fresh hokkien noodles 
  • 1 tbsp salt-reduced soy sauce, extra 
  • 1/4 cup sweet chilli sauce 
  • 2 tsp canola oil 
  • 150g broccoli florets 
  • 115g punnet baby corn, halved 
  • 12 snow peas, trimmed and halved 

Instructions

  1. Preheat oven to 190°C. Line a baking tray with non-stick baking paper. Place the mince, sesame oil, soy sauce, plum sauce, zucchini and carrot in a large bowl and mix until well combined. Using your hands, roll the mince mixture into walnut-sized meatballs and place on prepared tray. Bake for 10 minutes then remove and keep warm.
  2. Meanwhile, place the noodles in a heatproof bowl and cover with boiling water. Set aside for 5 minutes then drain and separate the noodles with a fork. Combine the extra soy sauce and sweet chilli sauce in a small bowl.
  3. Heat the oil in a large non-stick wok or frying pan over medium-high heat. Add the broccoli and cook for 2-3 minutes. Add the corn, noodles, meatballs and extra sweet chilli sauce mixture and cook for another 3 minutes. Add the snow peas and cook for another minute or until they are tender. Divide among serving bowls and serve immediately.
