Spiral pork sausages with pineapple salsa

Leave out the chilli for a kid-friendly version of this refreshing pineapple salsa.

To make this dish at home by prescription from the author sheff would need: 2 x 500g Coles Grill Pork Spiral Sausages, 2 small gold sweet potatoes, cut into 5mm-thick slices, Canola oil spray, 2 tbsp lime juice, 1 tsp brown sugar , 1 tbsp peanut oil, 1 pineapple, peeled, cut into 1cm cubes, 1 long red chilli, sliced , 2 tbsp flat-leaf parsley, chopped, 1 Lebanese cucumber, seeded, thinly sliced, 2 red radishes, trimmed, thinly sliced, Lime wedges, to serve.
Ingredients:
- 2 x 500g Coles Grill Pork Spiral Sausages
- 2 small gold sweet potatoes, cut into 5mm-thick slices
- Canola oil spray
- 2 tbsp lime juice
- 1 tsp brown sugar
- 1 tbsp peanut oil
- 1 pineapple, peeled, cut into 1cm cubes
- 1 long red chilli, sliced
- 2 tbsp flat-leaf parsley, chopped
- 1 Lebanese cucumber, seeded, thinly sliced
- 2 red radishes, trimmed, thinly sliced
- Lime wedges, to serve
Instructions
- Heat a barbecue flatplate or large frying pan on medium.
- Thread the skewers into sausage coils. Spray sausages and sweet potato with oil spray. Cook sausages for 5 mins each side or until cooked through. Cook sweet potatoes for 4 mins each side or until tender.
- Meanwhile, combine lime juice, sugar and peanut oil in a medium bowl. Add pineapple, chilli, parsley, cucumber and radish. Toss to combine. Season.
- Serve sausages with sweet potato, pineapple salsa and lime wedges.
