Spiral pork sausages with pineapple salsa

Leave out the chilli for a kid-friendly version of this refreshing pineapple salsa.

To make this dish at home by prescription from the author sheff would need: 2 x 500g Coles Grill Pork Spiral Sausages, 2 small gold sweet potatoes, cut into 5mm-thick slices, Canola oil spray, 2 tbsp lime juice, 1 tsp brown sugar , 1 tbsp peanut oil, 1 pineapple, peeled, cut into 1cm cubes, 1 long red chilli, sliced , 2 tbsp flat-leaf parsley, chopped, 1 Lebanese cucumber, seeded, thinly sliced, 2 red radishes, trimmed, thinly sliced, Lime wedges, to serve.

Ingredients:

  • 2 x 500g Coles Grill Pork Spiral Sausages 
  • 2 small gold sweet potatoes, cut into 5mm-thick slices 
  • Canola oil spray 
  • 2 tbsp lime juice 
  • 1 tsp brown sugar 
  • 1 tbsp peanut oil 
  • 1 pineapple, peeled, cut into 1cm cubes 
  • 1 long red chilli, sliced 
  • 2 tbsp flat-leaf parsley, chopped 
  • 1 Lebanese cucumber, seeded, thinly sliced 
  • 2 red radishes, trimmed, thinly sliced 
  • Lime wedges, to serve 

Instructions

  1. Heat a barbecue flatplate or large frying pan on medium.
  2. Thread the skewers into sausage coils. Spray sausages and sweet potato with oil spray. Cook sausages for 5 mins each side or until cooked through. Cook sweet potatoes for 4 mins each side or until tender.
  3. Meanwhile, combine lime juice, sugar and peanut oil in a medium bowl. Add pineapple, chilli, parsley, cucumber and radish. Toss to combine. Season.
  4. Serve sausages with sweet potato, pineapple salsa and lime wedges.
