Caraway pork chops with peach salsa

To make this dish at home by prescription from the author sheff would need: 2 tbsp olive oil, 2 tsp caraway seeds, 4 Coles Australian pork loin chops, 3 peaches, sliced, 1 long red chilli, finely chopped , 1 small red onion, finely chopped, 1 tsp ginger, grated fresh, 1 Lebanese cucumber, seeded, chopped , 3 tsp mint, finely chopped, 2 tbsp lime juice, Steamed rice, to serve.

Ingredients:

  • 2 tbsp olive oil 
  • 2 tsp caraway seeds 
  • 4 Coles Australian pork loin chops 
  • 3 peaches, sliced 
  • 1 long red chilli, finely chopped 
  • 1 small red onion, finely chopped 
  • 1 tsp ginger, grated fresh 
  • 1 Lebanese cucumber, seeded, chopped 
  • 3 tsp mint, finely chopped 
  • 2 tbsp lime juice 
  • Steamed rice, to serve 

Instructions

  1. Combine 1 tablespoon oil and caraway in bowl. Season. Rub pork with caraway mixture. Heat a large frying pan over medium-high heat. Cook pork for 4 mins each side or until just cooked through.
  2. Combine peach, chilli, onion, ginger, cucumber, mint, lime juice and remaining oil in a bowl. Season.
  3. Serve pork and rice topped with salsa.
