Char siu pork with apple salsa

To make this dish at home by prescription from the author sheff would need: 600g pork leg steaks, trimmed, thinly sliced, 1/3 cup char siu sauce, 2 tbsp peanut oil, 1 cup shredded Chinese cabbage, Steamed jasmine rice, to serve , 1 medium granny smith apple, cored, cut into matchsticks, 1/4 cup fresh coriander leaves, 1 tbsp lemon juice .

Ingredients:

  • 600g pork leg steaks, trimmed, thinly sliced 
  • 1/3 cup char siu sauce 
  • 2 tbsp peanut oil 
  • 1 cup shredded Chinese cabbage 
  • Steamed jasmine rice, to serve 
  • 1 medium granny smith apple, cored, cut into matchsticks 
  • 1/4 cup fresh coriander leaves 
  • 1 tbsp lemon juice 

Instructions

  1. Make apple salsa: Place apple, coriander and lemon juice in a bowl. Toss to combine.
  2. Place pork and char siu sauce in a bowl. Toss to coat (see note). Heat wok over high heat. Add half the oil. Swirl to coat. Add half the pork. Stir-fry for 2 to 3 minutes or until almost cooked. Transfer to a plate. Repeat with remaining oil and pork.
  3. Return pork to wok. Add cabbage. Stir-fry for 1 to 2 minutes or until heated through. Serve with rice and apple salsa.
