Ingredients:

  • 800g orange sweet potato, peeled, chopped 
  • 60g butter, chopped 
  • 4 pork loin medallions 
  • 1/3 cup orange juice 
  • 1 tbsp honey 
  • 1 tbsp wholegrain mustard 
  • 200g green beans, trimmed 

Instructions

  1. Cook sweet potato in a saucepan of boiling water for 10 to 12 minutes or until tender. Drain. Return to pan. Add one-third of the butter. Mash until smooth. Season with salt and pepper.
  2. Meanwhile, melt remaining butter in a large frying pan over medium heat. Cook pork for 3 to 4 minutes each side, or until just cooked. Transfer to a plate. Add orange juice, honey and mustard to pan. Stir to combine. Reduce heat to low. Return pork to pan. Cook for 1 to 2 minutes or until heated through.
  3. Place beans in a microwave-safe dish. Cover. Microwave on high (100%) for 2 to 3 minutes or until bright green and tender. Drain. Serve pork with mash and beans.
