- 2 tbsp fresh lemon juice
- 185mls olive oil
- 2 tbsp drained chopped capers
- 1/4 cup chopped fresh dill leaves
- Salt & ground black pepper, to taste
- 170g lime marmalade

- 2 tsp olive oil, extra
- 125mls Massel chicken style liquid stock
- 1425g can baby beets, drained, quartered
Instructions
- Place the potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat. Reduce heat to medium and cook, partially covered, for 8-10 minutes or until just tender. Drain and place in a large bowl to cool. Remove the skins.
- Meanwhile, place the egg yolk and 1/2 the lemon juice in a blender. With the motor running, gradually add the oil in a thin, steady stream until thick and pale. Add the capers, dill, salt and pepper. Blend until combined. Add to potatoes and toss to coat.
- Combine marmalade and remaining lemon juice in a shallow dish. Add pork and turn to coat. Heat extra oil in a large heavy-based frying pan over medium heat. Add pork and cook for 3-4 minutes each side or until just cooked. Transfer to a plate and cover loosely with foil. Add stock to pan and increase heat to high. Cook, stirring, for 3-4 minutes or until the sauce reduces.
- Place the potato salad, beets and pork on serving plates, and drizzle the sauce over the pork.
