Lime pork steaks and potato salad

Pork steaks are a succulent and less fatty alternative to red meats. They are delicious with this potato salad with homemade mayonnaise.

To make this dish at home by prescription from the author sheff would need: 750g kipfler potatoes, halved lengthways, 1 egg yolk, 2 tbsp fresh lemon juice, 185mls olive oil, 2 tbsp drained chopped capers , 1/4 cup chopped fresh dill leaves, Salt & ground black pepper, to taste, 170g lime marmalade , 4 pork cutlets, 2 tsp olive oil, extra, 125mls Massel chicken style liquid stock, 1425g can baby beets, drained, quartered.

Ingredients:

  • 750g kipfler potatoes, halved lengthways 
  • 1 egg yolk 
  • 2 tbsp fresh lemon juice 
  • 185mls olive oil 
  • 2 tbsp drained chopped capers 
  • 1/4 cup chopped fresh dill leaves 
  • Salt & ground black pepper, to taste 
  • 170g lime marmalade 
  • 4 pork cutlets 
  • 2 tsp olive oil, extra 
  • 125mls Massel chicken style liquid stock 
  • 1425g can baby beets, drained, quartered 

Instructions

  1. Place the potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat. Reduce heat to medium and cook, partially covered, for 8-10 minutes or until just tender. Drain and place in a large bowl to cool. Remove the skins.
  2. Meanwhile, place the egg yolk and 1/2 the lemon juice in a blender. With the motor running, gradually add the oil in a thin, steady stream until thick and pale. Add the capers, dill, salt and pepper. Blend until combined. Add to potatoes and toss to coat.
  3. Combine marmalade and remaining lemon juice in a shallow dish. Add pork and turn to coat. Heat extra oil in a large heavy-based frying pan over medium heat. Add pork and cook for 3-4 minutes each side or until just cooked. Transfer to a plate and cover loosely with foil. Add stock to pan and increase heat to high. Cook, stirring, for 3-4 minutes or until the sauce reduces.
  4. Place the potato salad, beets and pork on serving plates, and drizzle the sauce over the pork.
