Hoisin pork and broccolini stir-fry

To make this dish at home by prescription from the author sheff would need: 2 garlic cloves, crushed, 1/4 cup hoisin sauce, 2 tbsp Chinese cooking wine, 1 tbsp soy sauce, 2 tsp brown sugar , 1 tsp Chinese five-spice powder, 500g pork fillets, thinly sliced, 1 tbsp peanut oil , 1 bunch broccolini, trimmed, halved, 4 green onions, cut into 3cm lengths, 1 medium red capsicum, thinly sliced, 100g cup mushrooms, sliced, 440g packet shelf-stable thin hokkien noodles.

Ingredients:

  • 2 garlic cloves, crushed 
  • 1/4 cup hoisin sauce 
  • 2 tbsp Chinese cooking wine 
  • 1 tbsp soy sauce 
  • 2 tsp brown sugar 
  • 1 tsp Chinese five-spice powder 
  • 500g pork fillets, thinly sliced 
  • 1 tbsp peanut oil 
  • 1 bunch broccolini, trimmed, halved 
  • 4 green onions, cut into 3cm lengths 
  • 1 medium red capsicum, thinly sliced 
  • 100g cup mushrooms, sliced 
  • 440g packet shelf-stable thin hokkien noodles 

Instructions

  1. Combine garlic, hoisin, wine, soy sauce, sugar and five spice in a glass or ceramic bowl. Add pork. Toss to coat. Cover. Refrigerate for 30 minutes, if time permits. Drain pork, reserving marinade.
  2. Heat a wok over medium-high heat. Add half the oil. Swirl to coat. Stir-fry pork, in batches, for 2 to 3 minutes or until browned. Transfer to a bowl.
  3. Heat remaining oil in wok. Swirl to coat. Add broccolini, onion, capsicum and mushrooms. Stir-fry for 2 to 3 minutes or until broccolini is bright green and tender. Return pork and juices to wok. Add reserved marinade and noodles. Stir-fry for 1 to 2 minutes or until marinade boils. Serve.
