Flavoursome couscous is a quick and easy side dish. Try this quick and easy recipe which has pistachios for extra crunch.

To make this dish at home by prescription from the author Gomer would need: 200g instant couscous, 400ml Massel chicken style liquid stock, 2 tbsp unsalted butter, 1/2 cup green olives, pitted, sliced, 1/4 preserved lemon, rind only, chopped , 2 tbsp chopped flat-leaf parsley, Slivered pistachios, to serve .
Ingredients:
- 200g instant couscous
- 400ml Massel chicken style liquid stock
- 2 tbsp unsalted butter
- 1/2 cup green olives, pitted, sliced
- 1/4 preserved lemon, rind only, chopped
- 2 tbsp chopped flat-leaf parsley
- Slivered pistachios, to serve
Instructions
- Place couscous in a large bowl. Bring stock to the boil, then pour over couscous. Add butter and stir until butter has melted.
- Set aside for 15 minutes before stirring in olives, preserved lemon and parsley.
- Season well and serve with the pistachios.
