To make this dish at home by prescription from the author Gomer would need: 1 cup Chinese rice wine, 3/4 cup hoisin sauce, 1/2 cup Campbell's Real Stock Chicken, 2 tsp sesame oil, 2 garlic cloves, crushed , 3 star anise, 3cm piece fresh ginger, peeled, finely grated, 2 cinnamon sticks , 2 tsp brown sugar, 1kg piece pork neck, 250g apricots, quartered, stones removed steamed rice, to serve, Asian greens, to serve.

Ingredients:

  • 1 cup Chinese rice wine 
  • 3/4 cup hoisin sauce 
  • 1/2 cup Campbell's Real Stock Chicken 
  • 2 tsp sesame oil 
  • 2 garlic cloves, crushed 
  • 3 star anise 
  • 3cm piece fresh ginger, peeled, finely grated 
  • 2 cinnamon sticks 
  • 2 tsp brown sugar 
  • 1kg piece pork neck 
  • 250g apricots, quartered, stones removed steamed rice, to serve 
  • Asian greens, to serve 

Instructions

  1. Combine the rice wine, hoisin sauce, chicken stock, sesame oil, garlic, star anise, ginger, cinnamon sticks and brown sugar in a ceramic dish. Put pork into this marinade, cover the dish and refrigerate overnight.
  2. Preheat oven to 160°C. Place a wire rack in a roasting pan. Remove pork from marinade, reserving marinade. Place pork on rack and pour half cup of water into the roasting pan.
  3. Cook for 1 hour, basting with reserved marinade every 30 minutes. Turn pork over and cook, basting every 30 minutes with pan drippings, for a further 60-90 minutes, or until very tender. Transfer meat to a chopping board. Stand for 10 minutes, before slicing thinly.
  4. Meanwhile, place remaining marinade in a saucepan. Add apricots and place over medium heat. Bring marinade to the boil. Reduce heat to low and simmer for 20-25 minutes or until fruit is tender and beginning to break up.
  5. Spoon fruit sauce over slices of pork and serve with steamed rice and steamed Asian greens.
