To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 onion, thinly sliced, 2 cloves garlic, chopped, 4 cardamom pods, bruised, 200g button mushrooms, sliced , 1 1/2 cups Basmati rice, 2 tsp garam masala, 2 1/2 cups Massel vegetable liquid stock , 1 cup frozen peas, 100g baby spinach, 8 tandoori chicken kebabs, 8 pappadums.

Ingredients:

  • 1 tbsp olive oil 
  • 1 onion, thinly sliced 
  • 2 cloves garlic, chopped 
  • 4 cardamom pods, bruised 
  • 200g button mushrooms, sliced 
  • 1 1/2 cups Basmati rice 
  • 2 tsp garam masala 
  • 2 1/2 cups Massel vegetable liquid stock 
  • 1 cup frozen peas 
  • 100g baby spinach 
  • 8 tandoori chicken kebabs 
  • 8 pappadums 

Instructions

  1. Heat oil in a saucepan. Add onion, garlic and cardamom. Cook, stirring, for 5 minutes until golden. Add mushrooms and cook for 2 minutes. Stir in rice and garam masala. Add stock, bring to boil, reduce heat and simmer covered for 10 minutes. Turn off heat, stir through peas, replace lid and stand for 2 minutes. Stir through spinach and season.
  2. Meanwhile, cook kebabs on a heated oiled grill plate for 2 minutes on each side, or until cooked through. Lightly spray pappadums with oil, place on paper towel and microwave for 30 seconds. Serve kebabs with pilau and pappadums.
