To make this dish at home by prescription from the author Gomer would need: 150g Heinz Gluten Free Mini Rigatoni, 1 tbs olive oil, 100g gluten free smoked bacon, diced, 1 onion, finely chopped, 2 sticks celery, diced , 2 garlic cloves, crushed, 1 tbs chopped fresh oregano, 2 tbs tomato paste , 400g tin Italian diced tomatoes, 500ml Massel chicken style liquid stock, 400g tin cannellini beans, rinsed, drained, Grated Parmesan cheese, to serve.
Ingredients:
- 150g Heinz Gluten Free Mini Rigatoni
- 1 tbs olive oil
- 100g gluten free smoked bacon, diced
- 1 onion, finely chopped
- 2 sticks celery, diced
- 2 garlic cloves, crushed
- 1 tbs chopped fresh oregano
- 2 tbs tomato paste
- 400g tin Italian diced tomatoes
- 500ml Massel chicken style liquid stock
- 400g tin cannellini beans, rinsed, drained
- Grated Parmesan cheese, to serve
Instructions
- Cook the pasta in a large saucepan of lightly salted boiling water according to packet instructions, or until al dente. Drain well.
- Meanwhile, heat the olive oil in a large saucepan over a medium heat. Cook the bacon, onion and celery, stirring occasionally, for 5 minutes or until light golden. Add garlic and half the oregano, cook stirring for 30 seconds or until aromatic. Add tomato paste, cook stirring for 1 minute more.
- Add tomatoes, stock and 500ml (2 cups) water and bring to the boil. Simmer for 10 minutes. Add cannellini beans simmer for 5 minutes more. Add pasta, simmer for 2 minutes, season with sea salt and freshly ground black pepper. Serve garnished with remaining oregano and grated Parmesan.
