We know there is always a lot to do in the lead up to Christmas. Save yourself some time in the kitchen by simply adding some extra delicious flavour to store-bought stuffing.

To make this dish at home by prescription from the author Gomer would need: 10g unsalted butter, 20ml olive oil, 1 onion, chopped, 150ml Massel chicken style liquid stock, 200g packet bought sage and onion stuffing* , 2 tbsp chopped flat-leaf parsley, 2 tsp chopped fresh thyme, 2 tsp chopped fresh rosemary .

Ingredients:

  • 10g unsalted butter 
  • 20ml olive oil 
  • 1 onion, chopped 
  • 150ml Massel chicken style liquid stock 
  • 200g packet bought sage and onion stuffing* 
  • 2 tbsp chopped flat-leaf parsley 
  • 2 tsp chopped fresh thyme 
  • 2 tsp chopped fresh rosemary 

Instructions

  1. Heat butter and oil in a frying pan over medium heat. Add the onion and cook, stirring, until just softened but not brown. Add the chicken stock and bring to the boil. Remove from heat. Combine stuffing mix and onion mixture in a bowl. Add fresh herbs and stir to combine. Season and spread into a shallow, greased, lamington pan.
  2. Cover with foil and cook for 20 minutes.
  3. Remove foil and cook for a further 10 minutes.
  4. Serve alongside the turkey. (see related recipe)
