To make this dish at home by prescription from the author Gomer would need: 2 tbsp olive oil, 500g chicken sausages, 1 red onion, halved, sliced, 2 garlic cloves, crushed, 1 1/2 cups Basmati rice , 2 cups Massel chicken style liquid stock, 400g can diced tomatoes with oregano and basil, 300g broccoli, cut into small florets , 50g chargrilled red capsicum, sliced.

Ingredients:

  • 2 tbsp olive oil 
  • 500g chicken sausages 
  • 1 red onion, halved, sliced 
  • 2 garlic cloves, crushed 
  • 1 1/2 cups Basmati rice 
  • 2 cups Massel chicken style liquid stock 
  • 400g can diced tomatoes with oregano and basil 
  • 300g broccoli, cut into small florets 
  • 50g chargrilled red capsicum, sliced 

Instructions

  1. Heat 1 tablespoon of oil in a large frying pan over medium heat. Cook sausages, turning occasionally, for 8 to 10 minutes or until cooked through. Drain on paper towel. Thickly slice diagonally.
  2. Heat remaining oil in a large saucepan over medium heat. Add onion and garlic. Cook, stirring occasionally, for 3 to 4 minutes or until onion is tender. Add rice. Stir to coat. Add stock and tomatoes. Increase heat to high. Bring to the boil.
  3. Reduce heat to low. Cover and simmer for 15 minutes or until rice is just tender. Add broccoli, capsicum and sausages. Cook, stirring occasionally, for 5 minutes or until broccoli is tender. Season with pepper. Serve.
