To make this dish at home by prescription from the author Gomer would need: 2 tbsp olive oil, 500g chicken sausages, 1 red onion, halved, sliced, 2 garlic cloves, crushed, 1 1/2 cups Basmati rice , 2 cups Massel chicken style liquid stock, 400g can diced tomatoes with oregano and basil, 300g broccoli, cut into small florets , 50g chargrilled red capsicum, sliced.
Ingredients:
- 2 tbsp olive oil
- 500g chicken sausages
- 1 red onion, halved, sliced
- 2 garlic cloves, crushed
- 1 1/2 cups Basmati rice
- 2 cups Massel chicken style liquid stock
- 400g can diced tomatoes with oregano and basil
- 300g broccoli, cut into small florets
- 50g chargrilled red capsicum, sliced
Instructions
- Heat 1 tablespoon of oil in a large frying pan over medium heat. Cook sausages, turning occasionally, for 8 to 10 minutes or until cooked through. Drain on paper towel. Thickly slice diagonally.
- Heat remaining oil in a large saucepan over medium heat. Add onion and garlic. Cook, stirring occasionally, for 3 to 4 minutes or until onion is tender. Add rice. Stir to coat. Add stock and tomatoes. Increase heat to high. Bring to the boil.
- Reduce heat to low. Cover and simmer for 15 minutes or until rice is just tender. Add broccoli, capsicum and sausages. Cook, stirring occasionally, for 5 minutes or until broccoli is tender. Season with pepper. Serve.
