This carrots and radish taste sweet and spicy in the fresh orange juice dressing.

To make this dish at home by prescription from the author Gomer would need: 1 bunch radishes, washed, dried, stems and roots trimmed, thinly sliced, 2 celery sticks, trimmed, thinly sliced diagonally, 2 carrots, peeled, cut into matchsticks, 1 x 100g pkt snow pea sprouts, 80ml fresh orange juice , 65g flame raisins, 2 tsp olive oil, Salt & freshly ground black pepper .

Ingredients:

  • 1 bunch radishes, washed, dried, stems and roots trimmed, thinly sliced 
  • 2 celery sticks, trimmed, thinly sliced diagonally 
  • 2 carrots, peeled, cut into matchsticks 
  • 1 x 100g pkt snow pea sprouts 
  • 80ml fresh orange juice 
  • 65g flame raisins 
  • 2 tsp olive oil 
  • Salt & freshly ground black pepper 

Instructions

  1. Combine the radish, celery, carrot and snow pea sprouts in a serving bowl. Whisk together the orange juice, raisins and oil in a medium jug. Taste and season with salt and pepper.
  2. Drizzle the salad with dressing and gently toss to combine. Serve immediately with the mint & piri piri chicken skewers (see related recipe).
