To make this dish at home by prescription from the author Gomer would need: 8 Coles RSPCA approved chicken drumsticks, 175g Masterfoods apricot chicken recipe base, 1 onion, sliced, 1/2 cup hot chicken stock, 1 cup San Remo couscous , 1+1/4 cups hot chicken stock, 1 tbsp olive oil, 2 tsp lemon zest , 1/3 cup sultanas, 50g rocket leaves.
Ingredients:
- 8 Coles RSPCA approved chicken drumsticks
- 175g Masterfoods apricot chicken recipe base
- 1 onion, sliced
- 1/2 cup hot chicken stock
- 1 cup San Remo couscous
- 1+1/4 cups hot chicken stock
- 1 tbsp olive oil
- 2 tsp lemon zest
- 1/3 cup sultanas
- 50g rocket leaves
Instructions
- Preheat oven to 180°C or 160°C fan. Combine drumsticks, recipe base, onion, and stock in a bowl. Arrange in a baking tray and bake, turning once, for 1 hr, covering with foil for the last 10 mins of cooking.
- Place couscous in a medium bowl and pour over stock. Cover and set aside for 5 mins to soak. Fluff with fork, then stir in oil, lemon zest, sultanas and rocket. Season. Serve with chicken.
