To make this dish at home by prescription from the author Gomer would need: 8 Coles RSPCA approved chicken drumsticks, 175g Masterfoods apricot chicken recipe base, 1 onion, sliced, 1/2 cup hot chicken stock, 1 cup San Remo couscous , 1+1/4 cups hot chicken stock, 1 tbsp olive oil, 2 tsp lemon zest , 1/3 cup sultanas, 50g rocket leaves.

Ingredients:

  • 8 Coles RSPCA approved chicken drumsticks 
  • 175g Masterfoods apricot chicken recipe base 
  • 1 onion, sliced 
  • 1/2 cup hot chicken stock 
  • 1 cup San Remo couscous 
  • 1+1/4 cups hot chicken stock 
  • 1 tbsp olive oil 
  • 2 tsp lemon zest 
  • 1/3 cup sultanas 
  • 50g rocket leaves 

Instructions

  1. Preheat oven to 180°C or 160°C fan. Combine drumsticks, recipe base, onion, and stock in a bowl. Arrange in a baking tray and bake, turning once, for 1 hr, covering with foil for the last 10 mins of cooking.
  2. Place couscous in a medium bowl and pour over stock. Cover and set aside for 5 mins to soak. Fluff with fork, then stir in oil, lemon zest, sultanas and rocket. Season. Serve with chicken.
