Chicken, pak choy and soba noodle soup

To make this dish at home by prescription from the author Gomer would need: 2L chicken broth, chicken meat reserved, 60ml soy sauce, 5cm-piece fresh ginger, peeled, thinly sliced, 1 lemongrass stem, halved lengthways, 180g soba noodles , 1 bunch baby pak choy, halved lengthways, 100g snow peas, halved diagonally, 1 tbsp lime juice , Thinly sliced fresh red chilli, to serve.

Ingredients:

  • 2L chicken broth, chicken meat reserved 
  • 60ml soy sauce 
  • 5cm-piece fresh ginger, peeled, thinly sliced 
  • 1 lemongrass stem, halved lengthways 
  • 180g soba noodles 
  • 1 bunch baby pak choy, halved lengthways 
  • 100g snow peas, halved diagonally 
  • 1 tbsp lime juice 
  • Thinly sliced fresh red chilli, to serve 

Instructions

  1. Bring chicken broth to boil in a large stockpot over high heat. Add soy sauce, ginger and lemongrass. Reduce heat to medium. Simmer for 5 minutes.
  2. Add noodles. Cook for 4 minutes, adding the pak choy, snow peas and reserved chicken meat in the last 2 minutes of cooking. Stir in lime juice. Serve with chilli.
