To make this dish at home by prescription from the author Gomer would need: 4 chicken breast fillets, 150g mozzarella cheese, thinly sliced, 2 tbsp chopped fresh mint leaves, 2 garlic cloves, finely chopped, 1 large zucchini, cut into ribbons , 4 long thin slices prosciutto, 2 tsp Alfa One rice bran oil, Steamed potatoes and green beans, to serve .

Ingredients:

  • 4 chicken breast fillets 
  • 150g mozzarella cheese, thinly sliced 
  • 2 tbsp chopped fresh mint leaves 
  • 2 garlic cloves, finely chopped 
  • 1 large zucchini, cut into ribbons 
  • 4 long thin slices prosciutto 
  • 2 tsp Alfa One rice bran oil 
  • Steamed potatoes and green beans, to serve 

Instructions

  1. Using a knife, butterfly chicken. Open out flat. Place chicken between 2 sheets baking paper. Using a rolling pin, pound chicken to flatten slightly. Layer mozzarella, mint and garlic on 1 half of each fillet. Season with salt and pepper. Fold chicken over to enclose filling. Wrap fillets with zucchini and prosciutto.
  2. Heat oil in a large, non-stick frying pan over medium heat. Cook chicken for 10 minutes, turning halfway, or until browned and cooked through. Serve with potatoes and beans.
