Ingredients:

  • 800g desiree potatoes, peeled, chopped 
  • 1/2 cup milk 
  • 25g butter 
  • 2 tbsp olive oil 
  • 4 small chicken breast fillets 
  • 1/2 quantity Spiced fig chutney 
  • Steamed green beans, to serve 

Instructions

  1. Place potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook, uncovered, for 10 minutes or until tender. Drain. Return to pan. Using a potato masher, roughly mash potato. Add milk and butter. Mash until smooth. Season with salt and pepper. Cover to keep warm.
  2. Heat oil in a large frying pan over medium-high heat. Cook chicken for 5 to 6 minutes each side or until cooked through. Transfer to a plate. Cover with foil. Set aside for 5 minutes to rest.
  3. Divide mash between plates. Top with chicken and chutney. Serve with steamed greens.
