To make this dish at home by prescription from the author Gomer would need: 3 garlic cloves, crushed, 1 brown onion, grated, 1 tbsp allspice, 1 tsp fresh thyme leaves, 8 small chicken drumsticks , lime wedges, to serve .

Ingredients:

  • 3 garlic cloves, crushed 
  • 1 brown onion, grated 
  • 1 tbsp allspice 
  • 1 tsp fresh thyme leaves 
  • 8 small chicken drumsticks 
  • lime wedges, to serve 

Instructions

  1. Combine garlic, onion, allspice and thyme in a bowl. Cut 3 deep slits in each drumstick. Place chicken in a glass or ceramic dish. Rub garlic mixture into chicken. Cover and refrigerate for 4 hours or overnight.
  2. Preheat oven to 200°C/180°C fan-forced. Line a baking dish with baking paper. Spray a wire rack with oil. Place in prepared dish. Place chicken on wire rack. Cook for 40 to 50 minutes or until golden and cooked through. Serve with lime wedges.
