Chicken with tomatoes, olives and capers

To make this dish at home by prescription from the author Gomer would need: 12 chicken thigh fillets, trimmed and rolled in to compact shapes, 6 roma tomatoes, halved, 2 onions, cut into wedges, 2 tbsp olive oil, 2 tbsp balsamic vinegar , salt and cracked black pepper, 1 cup Kalamata olives, 1 1/2 tbsp capers , 1/3 cup torn basil leaves.

Ingredients:

  • 12 chicken thigh fillets, trimmed and rolled in to compact shapes 
  • 6 roma tomatoes, halved 
  • 2 onions, cut into wedges 
  • 2 tbsp olive oil 
  • 2 tbsp balsamic vinegar 
  • salt and cracked black pepper 
  • 1 cup Kalamata olives 
  • 1 1/2 tbsp capers 
  • 1/3 cup torn basil leaves 

Instructions

  1. Preheat the oven to 200°C. Line a large heatproof dish with non-stick baking paper. Add the chicken, tomato and onion and drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper and bake for 15 minutes.
  2. Remove, baste with the pan juices and add the olives and capers. Return to the oven and cook for another 10 minutes or until the chicken is cooked through.
  3. Set aside for 5 minutes then scatter with basil. Serve immediately.
