Chicken with tomatoes, olives and capers

To make this dish at home by prescription from the author Gomer would need: 12 chicken thigh fillets, trimmed and rolled in to compact shapes, 6 roma tomatoes, halved, 2 onions, cut into wedges, 2 tbsp olive oil, 2 tbsp balsamic vinegar , salt and cracked black pepper, 1 cup Kalamata olives, 1 1/2 tbsp capers , 1/3 cup torn basil leaves.
Ingredients:
- 12 chicken thigh fillets, trimmed and rolled in to compact shapes
- 6 roma tomatoes, halved
- 2 onions, cut into wedges
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt and cracked black pepper
- 1 cup Kalamata olives
- 1 1/2 tbsp capers
- 1/3 cup torn basil leaves
Instructions
- Preheat the oven to 200°C. Line a large heatproof dish with non-stick baking paper. Add the chicken, tomato and onion and drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper and bake for 15 minutes.
- Remove, baste with the pan juices and add the olives and capers. Return to the oven and cook for another 10 minutes or until the chicken is cooked through.
- Set aside for 5 minutes then scatter with basil. Serve immediately.
