To make this dish at home by prescription from the author Gomer would need: 1 tbsp peanut oil, 500g Coles RSPCA Approved Chicken Mince, 2 garlic cloves, crushed, 2 tsp freshly grated ginger, 2 tbsp oyster sauce , 1 tbsp soy sauce, 1 celery stick, finely chopped, 1 small red onion, thinly sliced , 1 spring onion, sliced, 1 long red chilli, thinly sliced, 250g pkt microwavable jasmine rice, 12 baby cos lettuce leaves, Spring onion, sliced, extra, to serve, Lime wedges, to serve.
Ingredients:
- 1 tbsp peanut oil
- 500g Coles RSPCA Approved Chicken Mince
- 2 garlic cloves, crushed
- 2 tsp freshly grated ginger
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 celery stick, finely chopped
- 1 small red onion, thinly sliced
- 1 spring onion, sliced
- 1 long red chilli, thinly sliced
- 250g pkt microwavable jasmine rice
- 12 baby cos lettuce leaves
- Spring onion, sliced, extra, to serve
- Lime wedges, to serve
Instructions
- Heat the oil in large frying pan over high heat. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned. Add the garlic, ginger, oyster sauce and soy sauce and cook, stirring, for 2 mins. Add the celery, onion, spring onion and chilli and cook for 2 mins or until vegetables are just tender.
- Meanwhile, heat the rice following packet directions. Add to the pan and stir through until well combined.
- Spoon the mince mixture evenly among lettuce leaves. Top with extra spring onion. Serve with lime wedges.
