To make this dish at home by prescription from the author Gomer would need: 1 tbsp peanut oil, 500g Coles RSPCA Approved Chicken Mince, 2 garlic cloves, crushed, 2 tsp freshly grated ginger, 2 tbsp oyster sauce , 1 tbsp soy sauce, 1 celery stick, finely chopped, 1 small red onion, thinly sliced , 1 spring onion, sliced, 1 long red chilli, thinly sliced, 250g pkt microwavable jasmine rice, 12 baby cos lettuce leaves, Spring onion, sliced, extra, to serve, Lime wedges, to serve.

Ingredients:

  • 1 tbsp peanut oil 
  • 500g Coles RSPCA Approved Chicken Mince 
  • 2 garlic cloves, crushed 
  • 2 tsp freshly grated ginger 
  • 2 tbsp oyster sauce 
  • 1 tbsp soy sauce 
  • 1 celery stick, finely chopped 
  • 1 small red onion, thinly sliced 
  • 1 spring onion, sliced 
  • 1 long red chilli, thinly sliced 
  • 250g pkt microwavable jasmine rice 
  • 12 baby cos lettuce leaves 
  • Spring onion, sliced, extra, to serve 
  • Lime wedges, to serve 

Instructions

  1. Heat the oil in large frying pan over high heat. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned. Add the garlic, ginger, oyster sauce and soy sauce and cook, stirring, for 2 mins. Add the celery, onion, spring onion and chilli and cook for 2 mins or until vegetables are just tender.
  2. Meanwhile, heat the rice following packet directions. Add to the pan and stir through until well combined.
  3. Spoon the mince mixture evenly among lettuce leaves. Top with extra spring onion. Serve with lime wedges.
