Ingredients:

  • 100g lean cooked skinless chicken breast, shredded 
  • 1 small celery stick, trimmed, diced 
  • 1 tbsp low fat mayonnaise 
  • 2 tsp finely chopped fresh chives 
  • 2 tsp chopped fresh mint 
  • 2 baby cos leaves 
  • 2 Arnott’s Vita-Weat Mixed Grain and Toasted Sesame Lunch Slices 

Instructions

  1. Place the chicken, celery, mayonnaise, chives and mint in a small bowl and stir to combine. Season with sea salt and freshly ground black pepper.
  2. Divide baby cos leaves between Arnott’s Vita-Weat Mixed Grain and Toasted Sesame lunch slices. Top with chicken mixture. Serve.
