To make this dish at home by prescription from the author Gomer would need: 3 tsp extra virgin olive oil, 3 tomatoes, finely chopped, 1 garlic clove, crushed, 1 tbsp fresh basil, finely chopped, 4 slices prosciutto , 4 Coles RSPCA Approved chicken breast schnitzels herb & garlic, Olive oil spray, 1/2 cup coarsely grated light mozzarella , Mixed salad leaves, to serve, Perino tomatoes, halved, to serve, Coles Bakery stone baked pane di casa, to serve, Basil leaves, to serve.
Ingredients:
- 3 tsp extra virgin olive oil
- 3 tomatoes, finely chopped
- 1 garlic clove, crushed
- 1 tbsp fresh basil, finely chopped
- 4 slices prosciutto
- 4 Coles RSPCA Approved chicken breast schnitzels herb & garlic
- Olive oil spray
- 1/2 cup coarsely grated light mozzarella
- Mixed salad leaves, to serve
- Perino tomatoes, halved, to serve
- Coles Bakery stone baked pane di casa, to serve
- Basil leaves, to serve
Instructions
- Place oil, chopped tomato and garlic in a medium non-stick frying pan over high heat. Bring to the boil. Reduce heat to medium and simmer, stirring occasionally, for 7 mins or until tomato breaks down and sauce thickens. Stir in chopped basil.
- Preheat oven to 220C. Line a baking tray with baking paper. Wrap 1 slice of prosciutto around each piece of chicken. Place on prepared tray and spray with oil. Bake for 15 mins. Top with tomato mixture and mozzarella. Bake for a further 10 mins or until chicken is cooked through and mozzarella is golden. Serve with salad, halved tomato and bread and top with basil leaves.
