Crepes with Chinese chicken

To make this dish at home by prescription from the author Gomer would need: 1 cup plain flour, 2 cups milk, 3 eggs, 1 tbsp finely chopped fresh chives, Olive oil spray , 1/4 cup hoisin sauce, 2 tsp rice vinegar, 1 barbecued chicken, shredded , 3 green onions, cut into 5cm lengths, 1 Lebanese cucumber, thinly sliced.

Ingredients:

  • 1 cup plain flour 
  • 2 cups milk 
  • 3 eggs 
  • 1 tbsp finely chopped fresh chives 
  • Olive oil spray 
  • 1/4 cup hoisin sauce 
  • 2 tsp rice vinegar 
  • 1 barbecued chicken, shredded 
  • 3 green onions, cut into 5cm lengths 
  • 1 Lebanese cucumber, thinly sliced 

Instructions

  1. Sift flour into a bowl. Whisk milk and eggs together in a jug. Add milk mixture to flour. Add chives. Whisk until well combined.
  2. Spray a medium, non-stick frying pan with oil. Heat over medium heat. Pour 2 1/2 tablespoons batter into pan. Swirl to cover base. Cook for 2 to 3 minutes or until light golden. Turn over and cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining batter.
  3. Combine hoisin sauce and vinegar in a bowl. Spread 1 teaspoon sauce mixture over 1 crepe. Top with chicken, onion and cucumber. Roll up to enclose filling. Cut in half. Repeat with remaining crepes, sauce mixture, chicken, onion and cucumber. Serve.
