Poached chicken

Use this versatile poached chicken in a pot pie, a spicy chicken pizza or serve it in a salad for a light and tasty lunch.

Ingredients:
- 1 litre Massel chicken style liquid stock
- 1 garlic clove, peeled, halved
- 2 sprigs fresh thyme
- 5 x 250g chicken breast fillets
Instructions
- Place stock, garlic and thyme in a large saucepan over medium-high heat. Bring to the boil. Add chicken. Return to the boil.
- Reduce heat to low. Simmer, covered, for 15 minutes or until chicken is just cooked through. Remove from heat. Stand chicken in liquid for 5 minutes. Remove chicken.
