To make this dish at home by prescription from the author Gomer would need: 4 small chicken breast fillets, trimmed, 75g snow peas, trimmed, 1/2 cup sour cream, 1 tbsp chopped tarragon, 2 tsp chopped chives , 2 small baby cos lettuce, washed, dried and trimmed, leaves separated, 6 radishes, trimmed, washed, and thinly sliced, 1/4 cup shaved parmesan .

Ingredients:

  • 4 small chicken breast fillets, trimmed 
  • 75g snow peas, trimmed 
  • 1/2 cup sour cream 
  • 1 tbsp chopped tarragon 
  • 2 tsp chopped chives 
  • 2 small baby cos lettuce, washed, dried and trimmed, leaves separated 
  • 6 radishes, trimmed, washed, and thinly sliced 
  • 1/4 cup shaved parmesan 

Instructions

  1. Fill a large, deep frying pan with water and place over medium heat. Bring to boil, then reduce heat to a low simmer and add chicken breasts. Cook for 5 minutes, turning once, then remove from heat and let the chicken remain in the cooking liquid for another 8-10 minutes or until cooked through. Remove chicken from pan and set aside.
  2. Blanch the snow peas in saucepan of boiling, salted water for 1-2 minutes or until tender. Remove and plunge into cold water and drain. Cut any large snow peas in half, diagonally.
  3. To make the dressing, whisk together sour cream, 1/4 cup of water, tarragon and chives until well combined.
  4. To serve, combine lettuce leaves, radishes and snow peas and arrange on serving plates. Slice each chicken breast diagonally and place on top of the salad. To serve, sprinkle with shaved parmesan and drizzle with dressing.
