To make this dish at home by prescription from the author Gomer would need: 250g Primo Classic Chorizo, cut into 1cm thick slices, 2 medium red onions, peeled, cut into thin wedges, 2 red capsicums, seeded, sliced thickly, 2 sprigs fresh rosemary, 2 sprigs fresh lemon thyme , 1 tbsp olive oil, 80g baby mesclun salad mix, 2 Ingham Cooked Chilli & Garlic Chicken Halves , Lemon wedges, to serve.

Ingredients:

  • 250g Primo Classic Chorizo, cut into 1cm thick slices 
  • 2 medium red onions, peeled, cut into thin wedges 
  • 2 red capsicums, seeded, sliced thickly 
  • 2 sprigs fresh rosemary 
  • 2 sprigs fresh lemon thyme 
  • 1 tbsp olive oil 
  • 80g baby mesclun salad mix 
  • 2 Ingham Cooked Chilli & Garlic Chicken Halves 
  • Lemon wedges, to serve 

Instructions

  1. Preheat oven to 180°C/160°C fan-forced. Place chorizo, onion, capsicum, rosemary, thyme and oil in a large baking dish. Toss gently to combine. Bake for 25 minutes or until vegetables are golden and tender.
  2. Meanwhile, cut chicken into 4 portions. Reheat chicken in the oven for 10 to 15 minutes. Place on serving plates. Serve with chorizo mixture, salad leaves and lemon wedges.
