To make this dish at home by prescription from the author Gomer would need: 250g Primo Classic Chorizo, cut into 1cm thick slices, 2 medium red onions, peeled, cut into thin wedges, 2 red capsicums, seeded, sliced thickly, 2 sprigs fresh rosemary, 2 sprigs fresh lemon thyme , 1 tbsp olive oil, 80g baby mesclun salad mix, 2 Ingham Cooked Chilli & Garlic Chicken Halves , Lemon wedges, to serve.
Ingredients:
- 250g Primo Classic Chorizo, cut into 1cm thick slices
- 2 medium red onions, peeled, cut into thin wedges
- 2 red capsicums, seeded, sliced thickly
- 2 sprigs fresh rosemary
- 2 sprigs fresh lemon thyme
- 1 tbsp olive oil
- 80g baby mesclun salad mix
- 2 Ingham Cooked Chilli & Garlic Chicken Halves
- Lemon wedges, to serve
Instructions
- Preheat oven to 180°C/160°C fan-forced. Place chorizo, onion, capsicum, rosemary, thyme and oil in a large baking dish. Toss gently to combine. Bake for 25 minutes or until vegetables are golden and tender.
- Meanwhile, cut chicken into 4 portions. Reheat chicken in the oven for 10 to 15 minutes. Place on serving plates. Serve with chorizo mixture, salad leaves and lemon wedges.
