To make this dish at home by prescription from the author Gomer would need: 2 long red chillies, 2 cups shredded cooked chicken, 1 stick lemongrass, trimmed, thinly sliced, 2 garlic cloves, crushed, 4cm piece fresh ginger, finely grated , 1 tbsp soy sauce, 1 1/2 tbsp brown sugar, 2 tbsp lime juice , 1/2 cup fresh coriander leaves, torn, 1/2 cup fresh mint leaves, torn, 24 large baby spinach leaves, Fresh coriander leaves, to serve.

Ingredients:

  • 2 long red chillies 
  • 2 cups shredded cooked chicken 
  • 1 stick lemongrass, trimmed, thinly sliced 
  • 2 garlic cloves, crushed 
  • 4cm piece fresh ginger, finely grated 
  • 1 tbsp soy sauce 
  • 1 1/2 tbsp brown sugar 
  • 2 tbsp lime juice 
  • 1/2 cup fresh coriander leaves, torn 
  • 1/2 cup fresh mint leaves, torn 
  • 24 large baby spinach leaves 
  • Fresh coriander leaves, to serve 

Instructions

  1. Thinly slice 1 chilli. Remove and discard seeds and membrane from remaining chilli. Thinly slice. Combine chilli, chicken, lemongrass, garlic, ginger, soy sauce, sugar and lime juice in a bowl. Cover, refrigerate for 2 hours.
  2. Add coriander and mint to chicken mixture. Season with salt and pepper. Toss gently to combine.
  3. Arrange spinach leaves on a platter. Spoon chicken mixture onto each spinach leaf. Serve sprinkled with coriander leaves.
