Ingredients:
- 100g softened butter
- 2 tbsp finely chopped fresh tarragon
- 1 tbsp Dijon mustard
- 2 garlic cloves, crushed
- 8 chicken marylands
- 2 fennel bulbs, trimmed, cut into wedges
Instructions
- Preheat oven to 200°C. Combine the butter, tarragon, mustard and garlic in a small bowl. Loosen the skin under the thigh of each chicken maryland. Spoon the butter mixture evenly among the pocket of each chicken. Arrange chicken among 2 roasting pans. Season to taste with salt and pepper. Arrange the fennel around the chicken.
- Bake in preheated oven, basting with pan juices occasionally, for 40-45 minutes or until chicken is golden brown and cooked through and fennel is tender. Transfer to a platter to serve.
